Vanilla Bean Brown Butter Cheesecake

  • - 2 cups graham cracker crumbs
  • - ½ cup brown butter cooled
  • - ¼ cup sugar
  • - 1 tsp cinnamon
  • [For the Filling]
  • - 24 oz cream cheese softened
  • - 1 cup sugar
  • - 3 eggs
  • - 1 cup sour cream
  • - ½ cup heavy cream
  • - Seeds of 1 vanilla bean
  • - 2 tbsp flour
  • - ½ tsp salt

Method
 

  1. Instructions:
  2. Prepare brown butter and let cool.
  3. Mix crust ingredients, press into pan, and bake 8–10 minutes.
  4. Beat cream cheese and sugar until smooth. Add eggs one by one.
  5. Stir in sour cream, heavy cream, vanilla bean, flour, and salt.
  6. Pour filling into crust. Bake in water bath at 325°F for 60–70 minutes.
  7. Cool in oven, then refrigerate overnight.
  8. Drizzle with brown butter before serving.

Notes:
- Substitute vanilla paste if beans are unavailable.
- Top with caramel or chocolate ganache for variation.
