  • 1 cup cooked shrimp finely chopped
  • 1 cup lump crab meat fresh or high-quality canned
  • ½ cup cooked scallops chopped (optional but recommended)
  • 1 ½ cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • ½ medium onion finely diced
  • 3 garlic cloves minced
  • ½ cup baby spinach finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt adjust depending on the saltiness of the seafood
