- Heat butter and olive oil in a skillet over medium heat.
- Add the sliced onions and cook for 4–5 minutes until softened.
- Add mushrooms and sauté for 6–8 minutes until they release moisture and start to brown.
- Stir in garlic, thyme, salt, and pepper.
- Add Worcestershire sauce and mix well.
- Optional: sprinkle the flour over the mixture and stir.
- Pour in the broth and let it simmer for 2–3 minutes until thickened.
- Remove from heat.
- Butter one side of each bread slice.
- Place a slice of Swiss cheese on the unbuttered side.
- Add a generous amount of mushroom mixture.
- Top with another slice of Swiss cheese.
- Close the sandwich with the second slice of bread (buttered side outward).
- Heat a pan over medium heat and grill the sandwich for 3–4 minutes per side until golden and the cheese is melted.
- Slice and serve immediately.
