Swiss Mushroom Melt

A rich and melty Swiss Mushroom Melt made with sautéed mushrooms, caramelized onions, and Swiss cheese. Perfect for a quick lunch or cozy dinner.

  • For the Mushroom Filling:
  • 2 cups sliced mushrooms cremini or button
  • 1 medium onion thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 tsp dried thyme or 1 tsp fresh
  • Salt and black pepper to taste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp flour optional, for thickening
  • 1/4 cup chicken or vegetable broth
  • For assembling the sandwich:
  • 4 slices of bread sourdough or brioche recommended
  • 4 slices Swiss cheese
  • 2 tbsp softened butter
  • Optional: sliced cooked chicken spinach, Dijon mustard

Method

  2. Heat butter and olive oil in a skillet over medium heat.
  3. Add the sliced onions and cook for 4–5 minutes until softened.
  4. Add mushrooms and sauté for 6–8 minutes until they release moisture and start to brown.
  5. Stir in garlic, thyme, salt, and pepper.
  6. Add Worcestershire sauce and mix well.
  7. Optional: sprinkle the flour over the mixture and stir.
  8. Pour in the broth and let it simmer for 2–3 minutes until thickened.
  9. Remove from heat.
  10. Butter one side of each bread slice.
  11. Place a slice of Swiss cheese on the unbuttered side.
  12. Add a generous amount of mushroom mixture.
  13. Top with another slice of Swiss cheese.
  14. Close the sandwich with the second slice of bread (buttered side outward).
  15. Heat a pan over medium heat and grill the sandwich for 3–4 minutes per side until golden and the cheese is melted.
  16. Slice and serve immediately.

Notes

Tips
Use fresh mushrooms for the best texture and flavor.
Cook on medium heat to avoid burning the bread before the cheese fully melts.
Add steak, chicken, or turkey for a protein boost.
Sourdough bread gives the best crispiness.
