- Instructions:
- Preheat the oven to 375°F (190°C).
- In a bowl, dissolve the baking soda in hot water. Stir in the molasses until smooth.
- In another bowl, mix flour and brown sugar. Cut in the butter until the mixture becomes crumbly.
- Pour the molasses mixture into the unbaked pie crust.
- Sprinkle the crumb mixture evenly over the top.
- Bake for 40–45 minutes, until the topping is golden and the filling is set but still gooey at the bottom.
- Let cool before slicing. Serve with whipped cream or vanilla ice cream if desired.

Notes:
For a stronger flavor, use dark molasses. For a sweeter taste, choose light molasses.
Do not overbake—Shoofly Pie should have a sticky, wet-bottom layer.
Can be made a day ahead; flavors deepen overnight.
