- Prepare the crust
- Preheat oven to 325°F (160°C).
- Mix graham crumbs, melted butter, and sugar.
- Press into the bottom of a 9-inch springform pan.
- Bake for 10 minutes and let cool.
- Make cheesecake filling
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time. Stir in sour cream, vanilla, and flour.
- Pour over cooled crust.
- Cook apple pie layer
- Melt butter in skillet. Add apples, brown sugar, cinnamon, nutmeg, and lemon juice.
- Cook until tender (about 8 minutes).
- Spread apples evenly on cheesecake filling.
- Bake cheesecake
- Wrap pan with foil and place in a roasting pan.
- Add hot water halfway up the sides (water bath).
- Bake 60–70 minutes until set.
- Turn off oven, crack door, and rest 1 hour. Chill 6 hours or overnight.
- Make salted caramel sauce
- Melt sugar in saucepan over medium heat until amber.
- Whisk in butter, then slowly add cream. Stir in sea salt.
- Let cool slightly.
- Assemble & serve
- Remove cheesecake from pan.
- Drizzle with caramel and garnish with apple slices or whipped cream.

Best apples: Granny Smith for tartness or Honeycrisp for sweetness.
Chill overnight for best texture and flavor.
Cheesecake can be made 1–2 days in advance.
