Quick Christmas Peppermint Pie

  • 2 cups chocolate sandwich cookie crumbs like Oreos
  • 5 tablespoons unsalted butter melted
  • For the filling:
  • 1 package 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy whipping cream
  • ½ cup crushed peppermint candies or candy canes
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • Red food coloring optional, for festive color
  • For the topping:
  • Whipped cream
  • Crushed candy canes
  • Chocolate shavings or drizzle

Method
 

  1. Instructions
  2. Prepare the crust
  3. Crush the cookies into fine crumbs.
  4. Mix with the melted butter until combined.
  5. Press the mixture firmly into the bottom of a 9-inch pie pan.
  6. Chill in the refrigerator while preparing the filling.
  7. Make the filling
  8. In a large bowl, beat cream cheese and powdered sugar until smooth.
  9. In another bowl, whip the heavy cream until stiff peaks form.
  10. Gently fold the whipped cream into the cream cheese mixture.
  11. Add peppermint extract, vanilla, and crushed candies.
  12. Stir in a drop of red food coloring if desired.
  13. Assemble the pie
  14. Spread the filling evenly into the prepared crust.
  15. Smooth the top with a spatula.
  16. Cover and refrigerate for at least 4 hours or overnight.
  17. Add the toppings
  18. Just before serving, garnish with whipped cream.
  19. Sprinkle crushed candy canes and chocolate shavings on top.
