- Prepare the crust
- Crush the cookies into fine crumbs.
- Mix with the melted butter until combined.
- Press the mixture firmly into the bottom of a 9-inch pie pan.
- Chill in the refrigerator while preparing the filling.
- Make the filling
- In a large bowl, beat cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Add peppermint extract, vanilla, and crushed candies.
- Stir in a drop of red food coloring if desired.
- Assemble the pie
- Spread the filling evenly into the prepared crust.
- Smooth the top with a spatula.
- Cover and refrigerate for at least 4 hours or overnight.
- Add the toppings
- Just before serving, garnish with whipped cream.
- Sprinkle crushed candy canes and chocolate shavings on top.
