  • 150 g about 5 oz feta cheese, crumbled
  • 1 cup cherry tomatoes halved
  • 1 small red bell pepper diced
  • 1 small zucchini diced
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes optional, for spice
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley for garnish
  • Optional Additions:
  • ¼ cup chopped black or Kalamata olives
  • 1 tablespoon sun-dried tomatoes finely chopped
  • A few slices of avocado for serving
  • Whole-grain or sourdough bread for dipping
