- 1 small zucchini diced
- 2 tablespoons extra virgin olive oil
- 1 clove garlic minced
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes optional, for spice
- Salt and freshly ground black pepper to taste
- Fresh basil or parsley for garnish
- Optional Additions:
- ¼ cup chopped black or Kalamata olives
- 1 tablespoon sun-dried tomatoes finely chopped
- A few slices of avocado for serving
- Whole-grain or sourdough bread for dipping
