Instructions
Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
Cook the meat: In a skillet, brown ground beef (or sausage) over medium heat until fully cooked. Drain fat. Add onions, peppers, garlic, and taco seasoning. Cook for 3–4 minutes until softened.
Mix the cornbread base: In a large bowl, combine cornbread mix, eggs, milk, sour cream, creamed corn, and whole corn kernels. Stir until just combined.
Assemble the casserole: Pour half of the cornbread mixture into the prepared dish. Spread the meat mixture evenly on top. Sprinkle with half of the cheese. Pour remaining cornbread batter on top. Finish with the rest of the cheese and bacon crumbles.
Bake uncovered for 35–40 minutes, or until golden brown and a toothpick inserted comes out mostly clean.
Rest & serve: Let the casserole sit for 10 minutes before slicing. Garnish with cilantro and green onions. Serve warm with sour cream or salsa on the side.
