  • 2 cups mushrooms sliced (cremini or button work best)
  • 1 small onion thinly sliced
  • Aromatics and Flavoring
  • 4 –5 garlic cloves minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter optional for richness
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt more to taste
  • ¼ teaspoon crushed red pepper flakes optional
  • Liquids
  • ½ cup vegetable broth
  • 1 –2 tablespoons lemon juice or white wine optional but recommended!
  • Garnish
  • Fresh parsley or cilantro
  • Parmesan cheese or nutritional yeast optional
