  • 1 ½ pounds 700g baby potatoes, halved or quartered
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 5 garlic cloves minced (or 1 tsp garlic powder)
  • 1 tsp paprika
  • 1 tsp dried Italian herbs oregano, thyme, or rosemary
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley chopped
  • 2 tbsp grated Parmesan cheese optional

Method
 

  1. Instructions:
  2. Wash and scrub the potatoes, then cut them into halves or quarters.
  3. Bring a pot of salted water to boil and parboil potatoes for 7 minutes. Drain and pat dry completely.
  4. In a large skillet, melt butter with olive oil over medium heat. Add garlic and sauté for 30 seconds.
  5. Add the potatoes, season with paprika, herbs, salt, and pepper. Cook for 4–5 minutes without stirring to form a crispy crust.
  6. Flip and continue cooking until golden brown and crispy on all sides (about 10 minutes total).
  7. Garnish with parsley and Parmesan cheese before serving hot.

Notes & Tips:
Dry potatoes thoroughly after boiling—moisture prevents crispiness.
Use a cast-iron skillet for maximum golden crunch.
For a flavor boost, add a squeeze of lemon juice before serving.
Can also be cooked in an air fryer at 400°F (200°C) for 18–20 minutes.
