  • 150 g fresh or frozen cranberries
  • 120 g unsalted butter softened
  • 80 ml honey
  • 30 ml water or fresh orange juice
  • Seasoning
  • 1/2 tsp fine sea salt
  • 1/2 tsp orange zest optional
  • 1/4 tsp ground cinnamon optional

Method

  2. Add cranberries and water (or orange juice) to a small saucepan and place over medium heat.
  3. Cook for 6–8 minutes, stirring occasionally, until cranberries burst and soften.
  4. Reduce heat and simmer until the mixture thickens slightly, then remove from heat.
  5. Allow the cranberry mixture to cool completely.
  6. In a bowl, beat the softened butter with honey until light and creamy.
  7. Add the cooled cranberry mixture, salt, and optional zest and cinnamon.
  8. Mix gently until evenly combined and marbled.
  9. Transfer to a jar and chill for at least 30 minutes before serving.

Notes
Let the butter soften slightly before serving for easy spreading.
For a vegetarian version, replace honey with maple syrup.
For extra richness, blend in 40 g cream cheese.
