  • 4 cups all-purpose flour
  • 1 packet 2 ¼ tsp active dry yeast
  • 1 ½ cups warm water 110°F/45°C
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp unsalted butter melted
  • 8 oz cheese cubed or shredded – cheddar, mozzarella, or blend
  • ½ cup baking soda
  • 9 cups water for boiling pretzels
  • 1 large egg beaten, for egg wash
  • Coarse sea salt for topping

  2. Activate the yeast: In a bowl, mix warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
  3. Make the dough: Add flour, salt, and melted butter. Mix and knead for 6–8 minutes until smooth and elastic.
  4. First rise: Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled.
  5. Preheat oven: Set to 450°F (230°C). Line baking sheets with parchment.
  6. Prepare baking soda bath: In a large pot, bring 9 cups of water and ½ cup baking soda to a boil.
  7. Shape pretzels: Divide dough into 8 pieces. Flatten each piece, place cheese in the center, then roll and seal tightly. Twist into traditional pretzel shapes or keep as stuffed rolls.
  8. Boil: Carefully drop pretzels into the boiling soda bath for 30 seconds each. Remove with a slotted spoon and place on baking sheet.
  9. Top & bake: Brush with beaten egg, sprinkle with coarse salt, and bake for 12–15 minutes until golden brown.
  10. Serve warm: Enjoy immediately for the best cheesy pull.
