Instructions
Activate the yeast: In a bowl, mix warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
Make the dough: Add flour, salt, and melted butter. Mix and knead for 6–8 minutes until smooth and elastic.
First rise: Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled.
Preheat oven: Set to 450°F (230°C). Line baking sheets with parchment.
Prepare baking soda bath: In a large pot, bring 9 cups of water and ½ cup baking soda to a boil.
Shape pretzels: Divide dough into 8 pieces. Flatten each piece, place cheese in the center, then roll and seal tightly. Twist into traditional pretzel shapes or keep as stuffed rolls.
Boil: Carefully drop pretzels into the boiling soda bath for 30 seconds each. Remove with a slotted spoon and place on baking sheet.
Top & bake: Brush with beaten egg, sprinkle with coarse salt, and bake for 12–15 minutes until golden brown.
Serve warm: Enjoy immediately for the best cheesy pull.
