  • 3 lbs beef chuck roast cut into large chunks
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 2 dried pasilla chilies
  • 1 white onion halved
  • 4 cloves garlic
  • 2 Roma tomatoes
  • 1 tbsp apple cider vinegar
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 4 whole cloves
  • 2 bay leaves
  • 1 cinnamon stick
  • 4 cups beef broth
  • For Tacos
  • Corn tortillas
  • 2 cups shredded Oaxaca or mozzarella cheese
  • Fresh cilantro chopped
  • White onion diced
  • Lime wedges

Method

  2. Step 1: Prepare the Chili Sauce
  3. Remove stems and seeds from dried chilies.
  4. Toast chilies lightly in a skillet until fragrant.
  5. Soak in hot water for 10–15 minutes.
  6. Blend with garlic, onion, tomatoes, vinegar, cumin, oregano, cloves, and some soaking liquid until smooth.
  7. Step 2: Cook the Meat
  8. Rub beef with chili sauce, marinate 2 hours (overnight is best).
  9. Place beef in a pot with broth, bay leaves, and cinnamon stick.
  10. Simmer 3–4 hours until beef is fork-tender.
  11. Step 3: Shred the Beef & Make Consommé
  12. Remove beef, shred with forks.
  13. Strain broth to create consommé.
  14. Step 4: Assemble Tacos
  15. Dip tortillas in consommé, fry on skillet.
  16. Add cheese and shredded beef, fold into tacos.
  17. Cook until crispy and golden.
  18. Step 5: Serve & Enjoy
  19. Serve hot with consommé for dipping. Garnish with cilantro, onion, and lime.
