  • For the apple cider caramel filling:
  • 2 cups apple cider
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 3 tbsp unsalted butter
  • ½ cup heavy cream
  • ½ tsp ground cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt
  • For the apple layer:
  • 3 –4 medium apples Granny Smith or Honeycrisp, peeled and thinly sliced
  • 1 tbsp lemon juice
  • 2 tbsp granulated sugar
  • ½ tsp ground cinnamon
  • Optional garnish:
  • Whipped cream
  • Vanilla ice cream
  • Extra caramel drizzle

Method

  2. Prepare the crust
  3. Mix flour, sugar, and salt.
  4. Cut in butter until coarse crumbs form.
  5. Add ice water gradually until dough comes together.
  6. Shape into a disk, wrap, and chill for 30 minutes.
  7. Make the apple cider caramel
  8. Simmer apple cider until reduced to ½ cup (15–20 minutes).
  9. Add sugars and butter, cook until golden.
  10. Slowly whisk in cream, spices, and salt. Let cool.
  11. Prepare the apples
  12. Toss apple slices with lemon juice, sugar, and cinnamon.
  13. Assemble the tart
  14. Roll out dough, place in tart pan.
  15. Spread thin layer of caramel on crust.
  16. Arrange apples in spiral or overlapping circles.
  17. Brush with caramel and sprinkle sugar.
  18. Bake
  19. Preheat oven to 375°F (190°C).
  20. Bake 35–40 minutes until apples are tender and crust golden.
  21. Cool slightly before serving.
